In most cases, going 66 str and minimum dex with heavy infusion or 70 to 80 dex and minimum str with sharp infusion will heavily outdamage quality. E.g. Bare in mind that bk and estoc do different dmg types I think whilst estoc generally outdmgs bandit knife that enemy may have had more resistance ti whatevrr dmg type giving you close results.
